Orange Apricot Bread

Ingredients
6 oz pkg dried apricots-diced

2 cups water

2 Tbsp margarine

1 cup sugar

1 Tbsp grated orange peel

3 1/2 cups all purpose flour

1/2 cup nonfat dry milk powder

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 cups orange juice

1/2 cup chopped pecans

1 egg

Directions
Preheat oven to 350 degrees. Cook apricots in water for 10-15 minutes, until tender. Drain and reserve 3/4 cup liquid. Cool apricots. Cream margarine and sugar together. Beat in egg and orange peel. Sift all dry ingredients together.  Add to creamed mixture, alternating with the reserved apricot liquid and orange juice. Stir apricot pieces and pecans into the batter. Pour batter into two lightly oiled 9 x 5 x 3 inch pans. Bake 40 to 45 minutes or until bread springs back when lightly touched in the center. Cool 5 minutes in pan.  Remove from pan and cool completely before slicing. Serves: 36
