Grilled Herbed Salmon

2 tsp cracked pepper

4 (4oz) salmon steaks

1 medium onion thinly sliced

1 lemon, thinly sliced

Fresh thyme sprigs

1 Tbsp olive oil

Non-stick cooking spray

Rub olive oil and press pepper onto both sides of salmon. Top with onion and lemon slices, set aside. Coat grill rack with non-stick cooking spray, place rack on grill over medium hot coals. Arrange fresh thyme on grill rack, place salmon over the thyme. Cover and cook 10-12 minutes or until fish flakes easily when tested with a fork. Transfer to serving platter, discarding thyme and lemon slices. Garnish with fresh lemon slices and thyme sprigs. Serves four
