Sauté onions and bell pepper in oil in a non stick skillet. Mix in cheese, spinach, garlic, and cumin. Season with pepper. To make each quesadilla, lightly spray one side of the tortilla with non-stick cooking spray. Place tortilla, sprayed side down. On a non-stick griddle. Spread about ¼ cup of spinach mixture over tortilla. Cover with another tortilla and spray top with non-stick cooking spray. Cook about 1 minute on each side, or until spinach mixture melts and tortilla is lightly browned. Cut each quesadilla into 4 wedges and serve. Serving size: two wedges.
