Caesar Salad Wraps and Goat Cheese, Olive Oil, Roasted Red and Yellow Peppers Pizza

Ingredients:

1 1/2 Tbsp white wine vinegar

1 Tbsp finely minced shallot

1/2 Tbsp Dijon mustard

1/4 tsp kosher salt

1/2 tsp freshly ground black pepper

2 Tbsp Filippo Berio extra virgin olive oil

5 cups mixed salad greens

4 oz shredded cooked chicken breast

1 hard boiled egg, peeled and chopped

1 strip bacon, cooked and crumbled

1 medium tomato diced

1/2 cucumber, seeded and diced

1/2 avocado, diced

1/4 cup crumbled bleu cheese (optional)

4 whole wheat wraps

French Bread Pizza:

4 oz Goat Cheese

2 Tbsp Filippo Berio Extra Virgin Olive oil

Roasted Red and Yellow Peppers

Directions:
First whisk vinegar, shallot, mustard, salt and pepper together  in a small bowl, then whisk in Filippo Berio extra virgin olive oil until all is combined and emulsified. Place salad greens and chicken in a large bowl. Add half of the dressing and toss to coat. Roll in wraps and serve with remaining dressing. Meanwhile cut the French bread into 4 inch pieces and lightly coat them with Filippo Berio extra virgin olive oil and bake in a 360 degree oven for 7-10 min. After you take them out of the oven add the goat cheese and roasted red and yellow peppers and serve with Caesar salad wraps.
