“Wake-Up” Blueberry Tofu Smoothie

Ingredients:
6 oz silken tofu
1 medium banana
2/3 cup soy milk
1 cup frozen blueberries
1 Tbsp honey
2-3 ice cubes

Directions:
Drain the silken tofu to remove excess water. Peel and slice the banana. Place on a baking sheet and freeze for about 15 minutes (this helps making the smoothie thicker).
Blend the banana, tofu and soy milk for 30 seconds. Add 1/2 cup of the frozen blueberries and process until smooth. Add the remaining blueberries, honey and ice cubes if using the process again, until smooth.

“Wake-Up” Caribbean Tofu Smoothie

Ingredients:
1 brick silken tofu
1 Papaya peeled and diced
1 cup canned pears, chopped with 1 tsp of the juice
1/3 to 1/2 cup soy milk, as desired
1/2 tsp coconut extract

Directions:
Drain the tofu and cut into chunks. Combine all the ingredients in a food processor or blender and blend until smooth. Serve immediately. |

“Wake-Up” Honey and Banana Tofu Smoothies

Ingredients:
2 medium ripe bananas
1 pkg soft tofu, drained
1/2 c crushed ice
2 Tbsp honey
1/4 tsp almond extract
Mint leaves

Directions:
Peel Bananas and cut into 1” pieces; cover with plastic wrap. Place in freezer until firm, at least 2 hours. In a blender, combine bananas, tofu, ice, honey, and extract; process until smooth. Pour into tall glasses and garnish with mint leaves. |
