Ingredients:
1/3 cup light extra virgin olive oil
3/4 cup sugar
2 eggs
3/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp nutmeg
1/4 tsp ground ginger
1 cup finely chopped peeled apple (2 small to medium)

Topping:
2 Tbsp sugar
2 Tbsp finely chopped walnuts
1/2 tsp cinnamon

Directions:
Preheat oven to 350°F. Spray an 8x8 baking pan with no stick cooking spray, set aside.
For cake: In the bowl of an electric mixer, combine oil, sugar, and eggs; beat at medium speed until well combined. Combine next 6 ingredients. Add to oil mixture; beat until just blended. Stir in apples. Spread evenly in prepared pan.
For topping: Combine sugar, nuts, and cinnamon. Sprinkle evenly over batter. Bake at 350°F for 30 minutes or until wooded toothpick inserted in center comes out clean. Cut into 3 x 2¼” rectangles. Serve warm or at room temperature.
